Prices come from the EU Commission DG AGRI fruit-and-vegetable supply-chain dataset: weekly wholesale observations reported by Spain and Portugal at the ex-packaging station stage — the price of packed fresh produce leaving the packing station, before distribution margin. We convert €/100 kg to €/kg and average all weekly observations within a calendar month.
Ex-packaging wholesale is the right benchmark for freeze-drying economics: it is close to what a processor sourcing by the pallet actually negotiates, unlike supermarket retail prices which include distribution and retail margin.
The mushroom series covers cultivated white button mushrooms (Agaricus bisporus) — DG AGRI does not report specialty or wild mushrooms. Seasonal crops (strawberry, cherry, kiwi) have months with no reported trade — shown as gaps rather than interpolated. Banana reporting has been irregular in 2026; where a series stops, we show it as it is.
